Again, not debating what makes it “true NC cue”. My comment was that using gas or electricity with wood might mean it’s not true NC bbq, but it doesn’t make it just “pork roast.” That’s absurd. If they’re not using wood smoke, then I agree. And I AM a proponent of wood or charcoal only, but I know BBQ can be made with other methods involving smoke.
But I’m also in the camp that Brisket, chicken, turkey, beef ribs, pork ribs, etc, are all TRUE BBQ. I’m in KCBS, so I need to be able to cook it all.

Actually it does, but I guess we'll have to agree to disagree. Anyway, thats not just my opinion. There is an accepted defintion of NC bbq among those who have real knowledge of the subject.

That’s fine. Not debating what is “true NC BBQ”. It doesn’t define what is “True BBQ” for the vast majority of the USA, so I don’t really care. It’s not odd to me that NC folks have pride in their BBQ, that’s great. It’s odd to me that they look down on and chastise those who do anything other than pork BBQ or use other methods. But just my opinion. I’m very knowledgeable in BBQ, but maybe not as much true NC BBQ. I’ve graduated beyond just pork.

I'm sorry who's "looking down" on anyone? I'm certainly not. Sticking up for tradition and authenticity doesn't have anything to do with looking down on someone. Just as saying that filet mignon is better than meatloaf doesn't mean I'm looking down on the person who cooked the meatloaf. And it doesn't mean I don't like meatloaf.

I'm sorry who's "looking down" on anyone? I'm certainly not. Sticking up for tradition and authenticity doesn't have anything to do with looking down on someone. Just as saying that filet mignon is better than meatloaf doesn't mean I'm looking down on the person who cooked the meatloaf. And it doesn't mean I don't like meatloaf.

The honest truth is I haven’t found the “oh my goodness, this is life changing bbq” experience in NC that I found at Interstellar BBQ in Austin, Jack Stack in KC, Central in Memphis, or Pappy’s in STL. Made the trip out to Skylight, have been to Luella’s in Asheville, had Sam Jones downtown. Still searching! I want to find it, just haven’t.

Wilbur's ? Not the Ft. Collins, CO one but the Goldsboro, NC one. Finger lickin' good.
Traditional NC BBQ is not a mountain thing. There are other kinds of fancy BBQ in Asheville that folks like such as 12 Bones, but it's not traditional NC BBQ.
Now if you stop in Lexington on the way you can get some traditional 'western' or Lexington style BBQ. Lexington BBQ aka The Monk would be the place there.
Oh and traditional NC bbq is not "pulled pork". If "pulled pork" is on the menu it's a nod to the hipster/bougie crowd. Traditional NC bbq is chopped and the restaurant is very unpretentious, no frills, maybe kinda rundown looking, serving the food on styrofoam, paper plates, etc. The restaurant might not even have a paper menu. Definitely does not serve "pulled pork". That's a sure sign you are not in a traditional joint.
And you might not like it and might prefer some brisket or beef ribs or something and that's fine. I'm not that big on BBQ myself, but I appreciate the tradition.
