It is practically impossible to find cider with no preservatives, and it's my understanding that it's illegal for people to sell unpasteurized cider in this state. We went on a hunt a couple of years ago so we could make our own (alcoholic) cider and the best we could find was pasteurized w/no preservatives at some farmstand out west. It made decent cider - just took a little while longer for the yeast to activate.
Our friends have pressed their own apples and made cider that way. Lots of work, but works the best.

That would be fine with me. I'll have to keep my eye open during the next 2 months when I travel towards the western part of the state.

Pasteurization should have no effect on how long it takes for the yeast to activate. It only involves heating the cider to a certain temperature for a certain time.

Anyone know the name of the people who sell the apple cider at the State Fair? They always have a booth over in the Homestead section next to the greenhouses. They press juice right there on the spot. If you can find out who they are, they might be able to hook you up.

Thanks toot68 . I just called these guys and they look to be a great option, considering that I will be driving through Siler City on my way to and from Charlotte next weekend.
They do not pasteurize or sorbate their cider and it is pressed fresh daily. They use a blend of at least 3 apple types to get a good mix of sweet and tart. The only think that I forgot to ask was the price.
