I'm sure you can get something from your insurance company showing the vehicle has been removed from coverage, or, you can go to the DMV and get a print out on your ownership history. Heck, you may even be able to pull a carfax, all you need is the VIN, which you can obtain from several places.
Always, always, support any letters of explanation with documentation. If you remove all doubt from that aspect of the file, then underwriting won't be scrutinizing every other aspect of your file. Make it easy on yourself.
also might help to show a copy of the registration to prove to the underwriter that you actually owned the car you claim to have sold
