Keep your current job and quit after. If you are offered a job that you want to accept, tell them you can start on X date (after you close on the house). Then give notice to your current employer. It's only 3 weeks away anyway!
Careful there.
If the lender asks the employer about future employment prospects, and the employer says, "Dunno. He just gave 3 weeks' notice," the OP stands to lose the loan.

almost every buyer I've helped who's gotten a mortgage, a copy of their original application comes out at closing, and the attorney tells the buyer "you're certifying to the lender that there have been no significant financial or job changes as of today".
Update. I closed and still hanging on to my present job. It hasn't been easy but now that I have the house I can take my time and make sure to find the correct job.
Congrats. you never try to switch jobs while the closing is in progress, you can change your job the day after closing.
