I just rehabbed 2 baths during Covid. (Yeah, great timing, I know.)
Anyway, in a guest bath, I had a single sink in a 60" hole. This made zero sense, as I don't need 150 bottles of hair tonic on the counter, so I went to CostCo and bought some 2-sink counters. They come with sinks/counters already, so that was a nice feature. There's still room for the lad's hair junk, even with 2 sinks. Just buy your fixture/drain hardware of your choice.
Unless it's a studio apartment (or MAYBE a one bedroom), I expect double sinks. Even if I were living alone, or with someone with another schedule. It's also about Resale.

Had 2 sinks once but have never used them together. Much prefer one's own entire bathroom to get ready.
One of the down sides for resell of the ranch house is that the Mistress bathroom complex is designed around one person, hence a single sink. I am told that would make the house harder to sell......but that is an issue for those who inherit the house.
My parents' house had 3.5 bathrooms. A .5 off the kitchen in the utility room, his and hers in their bathroom, and for us two remaining kids, double sinks in that bathroom. When I would visit as an adult with my two cats, it was a boon for it to be their room!
If you weren't planning on selling once you've finished, I'd say go with whatever works best for you. But for resale purposes, most buyers these days expect 2 sinks
