If you've never tried Zuch bread, if you've tried it and hated it- then try this recipe. It'll change your mind.
3 eggs
1 cup vegetable oil (can substitute melted butter)
2 teaspoons vanilla
2 cups sugar
2 cups shredded zucchini, moisture squeezed out- I do this in a fine sieve over the sink
3 cups flour (if you go self rising, skip the next three ingredients)
1 teaspoons salt
1 teaspoon baking powder
1/4 teaspoon baking soda
1 tablespoon cinnamon
1 pint blueberries (fresh or frozen)
lemon or orange zest, to taste
Beat together eggs, oil, vanilla, and sugar, add the salt, baking powder, soda and cinnamon. Blend in the shredded zuccuni, then add the flour mixing well. Gently stir in the blueberries.
If you're doing bundt pan (which I did, and recommend) make sure ya flour the heck out of it after greasing. Bake at 350 degrees for about 50 minutes, or until set. Makes one bundt or two regular loaves.
It is wonderful. My family loves it and they have no idea that it has zucchini squash in it. They think it is a banana nut bread. I will have to try it with blueberries.
It IS great, Huck. Now i'm sorta wishin' we'd grown zucchini this year. I'll be planting it for sure next year, though.
