Just like a lot of other people said: Butter and Parmesean cheese. Mrs. Dash garlic and herb seasoning and just a little bit of salt. Throw in some spinach if u have it!

My favorite thing to do with egg noodles:

Cottage cheese and black pepper.

No oil, no sprinkles of parm, no butter. Cottage cheese becomes creamy and stringy and turns into its own sauce when it's heated. It has the consistency of a *proper* manicotti filling, with a mild flavor. The black pepper gives it a little something-something.

You can add grilled chicken to this, or boiled spinach and garlic, or both, or pretty much anything. Maybe even try some water chestnut slices with those funky little chinese mushrooms and miniature corn cobs.
