I'm Southern & grew up my whole life hearing "a cup, a cup, a cup, a cup" because all you need for the perfect cobbler is a cup of flour, a cup of sugar, a cup of butter & a cup of milk. The great thing about cobblers is they're hard to mess up. One of the sticks of butter we used was to grease up the cast iron skillet, a lot of people use non-stick bakeware nowadays so you don't have to use 2 sticks if you don't need it.

The way my gran made it [and so do I] is somewhat different. About a quart of fresh peach slices, 1 1/2 cups sugar mixed with 1/2 cup flour and a tbsp of cinnamon and about 3 tbsp instant tapioca, stir into the peach slices and let stand for a couple hours or in the fridge overnight. Pour into a greased baking dish or pan, cover with a crust dotted with butter and sprinkled with more sugar and cinnamon, bake at 350 for 30-45 minutes, depending on how deep it is. Less time if it's shallower. Perfect with home made vanilla or fresh peach ice cream! When she used canned peaches, depending on how much syrup was included [light or heavy], she cut back on the sugar and increased the flour by the same amount.
Once in awhile, my gran would line the baking dish with a crust also, and make it more like a double-deep dish pie. She said it was easier to clean the dish that way.
1 huge can of peach halves in light syrup from Costco
2 boxes of Duncan Hines yellow super moist cake mix
1 stick butter
1 medium size bag chopped pecan- on sale cheaper than whole this time
Put all peaches and most of syrup into monster size casserole dish use whole can- I use Pyrex 10.5x14.5x2.
sprinkle cake mix over peaches. Cut up butter into small cubes and spread evenly over top. Then spread pecans over top evenly. Cook at 350 for about 45-55minute or until very thick and bubbly. Need to let syrup dry up and soak into cake mix. If it starts getting to brown on top lightly cover with foil.
Let cool for 15-30 minute depending on room temp. Serve up and enjoy the oral orgasms. A scoop of vanilla ice is fantastic.
