D: The only cheese that I have frozen is the Mozzarella and it is just fine. I do use the FS to wrap the other cheeses and I keep them in the fridge and they keep well for a couple of months.

Hmmm. Interesting! Maybe I'll do a mozzarella test one day.

We also wrap and keep cheeses in the fridge for that long -- maybe freezing some cheeses is just not "allowed" by the cheese gods.

Mozz is ok to freeze, Any water ADDED Product is NOT ok to freeze.. the water will expand and ruin it..
This is found mostly with meats..however some fresh cheeses are just that...fresh, please dont try to freeze them..

Freeze a Full beer bottle see what happins, Same concept with a water added meat or cheese..
It kinda explodes..
