I've had a few request for this, I don't use recipes much, it's kind of "creating at the stove" but here we go.
Ingredients
2 boxes of chicken broth-900 ml, that's about 25 ozs each
Half a head of cauliflower (use all you like)
One head of broccoli (same)
About 20 Brussels sprouts
1 cup of cream-the heavier the better
1 pkg cream cheese
shredded cheddar cheese (use you fav sharp cheese) at serving
salt and pepper
Start the broth heating, cut the cauliflower and broccoli as small as you can, add to broth
Boil until the veggies are starting to get mushy
Use food processor or hand blender to puree
Add cream cheese (blend it in) and cream
If it needs thickening, thicken with your fav. thickener here
Clean the Brussels sprout, toss in whole, cook until tender
Add salt and pepper to taste
Serve with a few B sprouts in each bowl (we make lots!), shred sharp cheese on top at serving
Have a good crusty bread with it!
Great recipe! BTW - did you ever made mashed potatoes 50/50 with cauliflower? ( add butter, milk or sour cream and fresh chopped dill). It's wonderful!!
