These blintzes are akin to a cinnamon/cheese roll up type of pastry. So easy to make and so yummy. I made them for a work event and at least 10 people asked me for the recipe.
Wonder Blintzes (makes about 2 dozen)
1 loaf Wonder Bread or other soft white bread
1 - 8 oz package cream cheese (block type)
1 egg yolk
1-1/2 cups sugar (1/2 cup for filling, 1 cup for topping)
2-3 teaspoons cinnamon
1/2 stick butter (melted)
Cut the crusts off bread (discard crusts or use for croutons/feeding birds etc!)
Roll each slice flat with rolling pin and put aside.
Mix well - 1 cup sugar with cinnamon and put aside.
With electric mixer, mix cream cheese, 1/2 cup sugar and egg yolk until smooth.
Spread cream cheese mixture on sliced bread and roll up like a jelly roll.
Brush with melted butter, then roll in cinnamon/sugar mixture.
Place in buttered baking pan.
Bake @ 400 for 13 minutes until golden brown.
They are delicious alone or can be served with sour cream, applesauce or berries.
Can be served warm or at room temp. They freeze very well so you can prepare them ahead of time, then thaw for 30 minutes prior to baking.
