I am going to make a salad with cucumber, tomatoes, onion, and italian dressing. I have some leftover feta. Should I use it in the salad or not?

Absolutely! Yum!

I make a similar salad except I use balsalmic vinegar and a small amount of olive oil as the dressing.

Ok, thanks! I used the feta, and the salad was excellent!!!!

One more question...

How long will the salad be good for in the fridge?

I have often had it for lunch the next day.

No more than 1 day - also try experimenting according to taste - avocados, garlic, bell peppers, different greens, etc

You could probably have the salad last a few days if you get out as much liquid and air as you can and also keep the dressing separate and only add to your plate just prior to eating. Then it won't be soggy.
