My nieces visited me for the weekend and we had a 'Princess Weekend' and I treated them to a day at the spa and the mall. I treated them to a breakfast fit for a princess with red velvet pancakes with cream cheese glaze. The southerners know all about the goodness of Red Velvet Cake, and I decided to introduce them to this treat. I saw this recipe and decided to share it with you all. I don't have time to make pancakes from scratch, so I did shortcut and use Bisquick:


2 Cups of Pancake Mix
1 Tbsp of Cocoa
3/4 cup of Buttermilk
1/2 cup of milk
1 Egg
1 Tsp Baking Soda
2 Tsp Vanilla Flavoring
3/4 Tsp Red food coloring

Mix the dry ingredients together.

Add buttermilk, eggs, and vanilla

Mix until combined

Add red food coloring drops, but don't overmix the batter because it can make it tough

I spray my griddle or skillet with butter-flavored spray

Pour onto the griddle/skillet and cook

Cream Cheese Glaze

4 ounces low-fat cream cheese, softened
1 cup powdered sugar, sifted
1 teaspoon vanilla extract
1 tablespoon milk, if needed

In a small bowl, use a fork to stir together the cream cheese, powdered sugar and vanilla extract. Add a little milk if needed to make a glaze that has a thin enough consistency to drizzle.

To serve, drizzle the glaze over the pancakes and enjoy!
