Has anyone ever made pumpkin pancakes? I have a hankering to make pumpkin pancakes sometime soon. Do you have any other creative and unusual ideas and recipes for pancakes? Thanks!

I have made pancakes, donuts, muffins, and waffles with pumpkin. They are very tasty and seasonal in the fall and holidays. For pancakes & waffles, in a recipe that calls for 1 cup flour, I reduce the milk slightly and add 1/2 cup pumpkin, 2 Tablespoons sugar, 1/2 teaspoon cinnamon and 1/4 teaspoon nutmeg.

For donuts and muffins just look online for recipes.

Pumpkin pancakes sound great! I've never thought of that before, and I love pumpkin (and pancakes, lol). I will def. give this a try. Thanks.

I frequently make pumpkin nog instead of egg nog in the winter. There's also pumpkin fudge, if you feel adventurous. I found the recipes online, but the links were on a computer that died, so just google and see what looks interesting.
