I've made a lot of Curries, but always used a pre-packaged paste or spice mix, and they have been good, but today I tried my hand at a "Scratch" Vindaloo, curtosey of Aarti Sequeira of Aarti Party. Easy, relatively quick and INCREDIBLY good. Hope I don't violate any rules by posting a link:

Only changes I made is that I served it over brown rice because that's what I had, and because I'm on a low GI diet, and I added a handful of frozen peas before the last 10 minutes, both of which were good.

I highly recommend this recipe!

I love her! I wish Food Network had more chefs that did Ethnic cooking. I wish they had a south american chef, and a chef from different countries. I sick of the same, Cathy Lee, Racheal Ray, blah blah american chefs.

There are a lot of ethnic chefs on the new Cooking Channel. I've seen South American, Asian, Indian, Mexican, Caribbean, Greek, even a true French chef. Check the listings, though, because they're mostly on early or late. Also the Cooking Channel shows the original Iron Chef show from Japan with a voice-over translation.

Someone that would do simple preparations, nothing with 2 gazillion ingredients.
