Here is a version of Chicken Tuscany my sister in law gave me....this is so good and fairly easy to make!

5 medium red potatoes, scrubbed & sliced 1/8" thick
4 TBS olive oil
4 TBS grated parmesan cheese
3 tsp minced garlic
3 tsp minced fresh rosemary (or 1-1/2 tsp dried)
2 lb chicken breast
at least 1/2 tsp salt
at least 1/4 tsp pepper

1. Preheat oven to 425
2. Pat potatoes dry with paper towel
3. Toss potatoes with 2-1/2 TBS oil, 2 TBS cheese, 2 tsp garlic, 2 tsp rosemary, 1/2 tsp salt & 1/4 tsp pepper
4. Arrange potatoes in a single layer in a 13 X 9 baking dish
5. Top with remaining cheese
6. Bake uncovered for 15 minutes or until potatoes are slightly brown

Meanwhile, in a large skillet over medium heat:
7. Heat remaining oil
8. Add chicken and season lightly with remaining rosemary, garlic, and salt and pepper to taste
9. Cook chicken about 5 minutes on each side or until browned
10. Arrange chicken on top of potatoes and drizzle with any oil from skillet
11. Return to oven and bake an additional 20-25 minutes or until no longer pink

I love the ingredients you have chosen for this recipe, but I am troubled about one thing and I wonder if your sister in law has made a slip. This will be a very dry dish if you arrange the chicken one top of the potatoes and bake in the oven. Is it possible that she meant to bake the chicken in the pan and put the potaotes on top? I've never seen chicken cooked up on top like that. Please don't take this as a criticism. I want to make this dish, I just can't picture 5 potatoes in a pan with chicken arranged on top.

Nope, I don't take it the wrong way No - its not a slip, after I sauteed the chicken a bit on each side and the potatoes cooked for about 15 mins in the oven and got a little brown I put the chicken on top and continued to the entire dish together. It was perfect! I promise you won't be sorry

PS to everyone: the potatoes are just layered in the dish as evenly as possible - they won't be in a true "single layer"
