Here is a version of Chicken Tuscany my sister in law gave me....this is so good and fairly easy to make!
5 medium red potatoes, scrubbed & sliced 1/8" thick
4 TBS olive oil
4 TBS grated parmesan cheese
3 tsp minced garlic
3 tsp minced fresh rosemary (or 1-1/2 tsp dried)
2 lb chicken breast
at least 1/2 tsp salt
at least 1/4 tsp pepper
1. Preheat oven to 425
2. Pat potatoes dry with paper towel
3. Toss potatoes with 2-1/2 TBS oil, 2 TBS cheese, 2 tsp garlic, 2 tsp rosemary, 1/2 tsp salt & 1/4 tsp pepper
4. Arrange potatoes in a single layer in a 13 X 9 baking dish
5. Top with remaining cheese
6. Bake uncovered for 15 minutes or until potatoes are slightly brown
Meanwhile, in a large skillet over medium heat:
7. Heat remaining oil
8. Add chicken and season lightly with remaining rosemary, garlic, and salt and pepper to taste
9. Cook chicken about 5 minutes on each side or until browned
10. Arrange chicken on top of potatoes and drizzle with any oil from skillet
11. Return to oven and bake an additional 20-25 minutes or until no longer pink
