I have never had herbs de province so I don't know I'm sure this would actually work with any herb of your choice that has a strong flavor. Let me know how it works out!

Using sourdough is a must...I've made this a few times and once without sourdough, not the same at all. Also instead of the red peppers in a jar, I used vari-colored peppers, chopped and roasted (orange, yellow, green, red) which made the dish really visually attractive.
Thanks for sharing! This sounds good! And thanks for the tip about the sour dough bread..I'll remember that. I have never seen this website before - I will definately be doing some exploring!
