Bored with the same-o same-o chicken recipes, one night I was inspired to find a new recipe for chicken breast to bake in the oven - less hassle with preparation, of course. Came across this gem:
4 chicken breast halves, with skin on or removed as you prefer
1/2 C honey
1/3 C Dijon mustard
3 tsp. curry powder
6 Tbsp butter, melted
1/4 tsp black pepper
pinch of cayenne
Wash and pat dry the breasts. Whisk the rest of the ingredients together. Place the breasts in a foil-lined baking dish sprayed with oil. Drizzle sauce over breasts, cover with foil and let sit in fridge for 30 minutes if you have the time (I didn't, and it still turned out great).
Bake at 375 for 40 minutes; remove foil, baste breasts, and bake for another 30 minutes.
The resulting dish was a hit with the whole family - including my finicky kids.
Now I'm off to get the clay pot ready for some tandoori chicken for tonight!
