Does anyone have some frosting/icing recipe for cakes. I will like to get the recipe for stablize whipped cream. I don't like butter cream cause it's to sweet. I willike something smooth and fluffy like the icing on a Mexican cake. Thanks

You can put less sugar in if you prefer your frosting to be not too sweet (I am in the same boat). I actually use splenda to save even more calories and carbs. If you use about 4 oz. of mascarpone cheese (a very mild, creamy cheese that is more like thick cream, in case you've never used it before), whip it with about 3 tablespoons of powdered sugar (or splenda) with a teaspoon of vanilla, then beat in about 8 oz of heavy cream then you have a nice smooth frosting that won't collapse/air out.

For most of my cakes, I make a cream cheese icing that is so light and fluffy (yummy too!).

1 8 oz block cream cheese (room temperature)
4 tblsp butter softened
3 cups confectioners sugar

Mix cheese and butter well with electric mixer, add sugar 1 cup at a time and beat until light and fluffy.
