O.K.... so I dug my waffle iron out of the depths of one of my kitchen cabinets and feel pretty motivated to make waffles for breakfast tomorrow.

I am debating between buying a box of pancake mix or making the batter from scratch.

Yeah, I know homemade tastes best so I'd like to know if anyone has any favorite recipes for fluffy homemade waffles they would like to share.

Or, if you'd like to share which of the best tasting pre-made mixes that you like to use.

Thanks a lot!

I need a really good recipe, also.
I used Bisquick...they were ho-hum tp me.
I LOVE IHOPS waffles.
Homemade is the way to go. Someone told me she uses eggs and a whipped egg white that she folds in. That might be the key, not sure.
I had a waffle yesterday with strawberries...no syrup. It was great.

This is a good one:

3 eggs
1-½ cups buttermilk
1-¾ cups flour
2 t baking powder
1 t baking soda
½ t salt
½ cup vegetable oil
1. Heat waffle iron. Beat eggs; beat in remaining ingredients until smooth.
2. Pour batter from cup or pitcher onto center of hot waffle iron. Bake about 5 minutes or until steaming stops. Remove waffle carefully.

If you like a malty waffle, you can add some malt syrup (available at home beer-brewing stores). Experiment to taste. Williams-Sonoma has a pretty good mix, but it's expensive. If you've ever had a hotel continental breakfast waffle, it was probably a mix from Carbon's: http://shop.goldenmalted.com/.

Here is a waffle recipe which we have been using for many years. We serve the waffles with butter, maple syrup and crushed or sliced fruits (blueberries, raspberries or strawberries).

Waffle recipe

Ingredients:

3 eggs, 1/3 c oil,1 ½ c milk, 2 tsp sugar, ½ t salt, ½ tsp vanilla

2 c flour (note: we use whole wheat pastry flour which gives extra flavor), 2 tsp baking soda,

Instructions:

Separate egg yolks and whites.

Beat egg yolks, mix in oil, salt, sugar, milk and vanilla

Mix flour, baking soda in a separate bowl. Pour liquid mixture slowly in dry mixture and mix well.

Beat egg whites until fluffy. Fold gently in the wet mixture.

An extremely good waffle recipe is H.R.M.'s waffles. It should come up if you google it.

I use malt powder. In our store it is near the chocolate powder you put in milk.

We like homemade blueberry syrup on ours:

1C fresh blueberries
1C sugar
1C water
1t lemon juice

mix sugar and water in saucepan and warm until sugar dissolves. Add berries and bring to boil. Boil for 15 minutes whisking often. Remove from heat and add lemon juice. let cool to room temp and it will thicken.
