I use this for both chicken and shrimp--except I don't measure

2 gloves garlic, minced
2 tablespoons fresh lime juice
3 tablespoons olive oil
2 teaspoons tequila (this is where I don't measure )
3 tablespoons chopped fresh cilantro
1/4 teaspoon ground red pepper (I use pepper flakes or fresh jalepenos)
Salt and pepper

This works beautifully for all forms of chicken limbs - wings, legs, thighs.
Just remember that the thicker pieces need a longer marinating time

"Ginger Marinade"
  • 3 tablespoons rice or sherry vinegar
  • 3 tablespoons Thai hot sauce
  • 3 tablespoons low-sodium soy sauce
  • 3 tablespoons grated fresh ginger
  • 3 cloves garlic, minced
  • 3 tablespoons sesame oil
  • 2 tablespoons sesame seeds
  • 3 tablespoons hoisin sauc
Mix these together. Allow chicken pieces to marinate for at least a couple of hours. This works well in a hot oven, under a broiler or on the grill.

Easy and delicious -

Equal parts Saucy Susan and Terriyaki sauce. Cook chicken part of the way, if it has skin let that get golden, then coat with mixture. Continue cooking until done. Drizzle hot marrinade over chicken before serving. The meat gets a dark reddish golden. Everyone loves this and it's soooooooooo easy.

This is my absolute favorite marinade for chicken. I use it to marinate one or two boneless, skinless breasts overnight and then make them on a cast iron skillet. My boss keeps asking me to make this.

Ginger Lime Chicken Marinade

1/4 cup soy sauce
3 tablespoons vegetable oil
3 tablespoons honey
Juice of 2 limes and grated rinds
4 garlic cloves, minced
1-inch piece ginger root (Or 1 tbsp of ginger paste.)
1/2 teaspoon dried mint
