go online and check the many recepies.

I only use fresh lime juice w/ chopped tomatoes/chopped green onions/a little garlic, cilantro/parsley; and a good really "FRESH" WHITE FISH(rock fish, grouper, Calico Bass(Calif), true cod(Alaska), Halibut, never tried flounder, Tile fish), Scallops (fresh" also work well as does abalone.
Love fresh Ceviche..

South Texas-Northeast Mexican ceviche is simple and so good on a hot summer evening.

Think salsa and fish.

In a bowl add together

Dice 1 medium yellow onion
small dice 1/4 bell pepper
smash and finely dice 1 clove garlic
dice 3 large ripe roma or vine ripe tomatos
fine chop 1/4 cup cilantro
1/3-1/2 cup fresh squeezed lime, lemon or mix juice
1-2 diced ripe but firm avocados...add last to mixture...gently fold in

Now you can varry to liking...
1/4 cup V-8 juice or plain tomato juice
add 1/8 cup tomato catsup or co_cktail sauce or both

heat...

1-2 thinly sliced jalepeno or serrano chilies

seafood...
any firm flesh white fish fillets cod, drum, roughy, snapper...
shrimp
cube about 1 - 1 1/2 lbs.

mix all well in bowl, salt and blk pepper to taste, chill for a couple hours, serve with crackers or tortilla chips
