This is one of my summer time favorites.

1 - 8 1/2 oz cornbread muffin mix (I use Jiffy)

1 - 1 oz envelope Ranch style salad dressing mix

1 - 8 oz of sour cream

1 cup of mayonaise

3 large tomatoes chopped

1/2 cup of chopped red pepper

1/2 cup of chopped green pepper

1/2 cup of chopped green onions

2 - 16 oz size cans refried beans (any variety that you like)

8 oz shredded cheddar cheese

10 bacon slices crumbled or you can use bacon bits

2 cups of frozen corn or canned corn (frozen is what I use)

Prepare cornbread muffin mix per package instructions and let it cool.

Stir together salad dressing, sour cream and mayonaise and set aside.

Combine tomatoes and next 3 ingredients gently toss

Crumble cornbread into 9x13 pan. Layer with refried beans, tomato mixture, corn, and salad dressing mixture. Top with shredded cheese and bacon.

Cover and chill at least 3 hours.

My friend makes this, but just with veggies, no beans, cheese, or bacon.

I'd never heard of it before I met him.

It's a lot better than it sounds!

As I know it, it's got the same ingredients as a macaroni or potato salad, but with corn bread as the starch. I definitely wrinkled my nose, but it turned out to be really good.
