Spinach Souffle

1 pt. cottage cheese

1/2 stick of butter melted

3 eggs beaten well

10 oz. pkg chopped spinach thawed and drained well

8 oz. shredded cheddar cheese

1/4 tsp. salt

3 T. flour (add after everything else is mixed well)

Mix all of the above. Turn into well greased pie plate or similar size pan. Bake 1 hour @ 350 degrees or until knife inserted into the center comes out clean. This reheats very well also.

We buy the frozen Stouffer's spinach souffle and love it. I will have to give this a try real soon.

I love spinach, i'm also going to have to try this. Good thing it re-heats because i'm the only one who's going to eat it!!!
