Mexican Chicken


6 chicken breasts or 1 fryer, boiled and boned

1 can cream of mushroom soup

1 can cream of chicken soup

1 can diced Rotel tomatoes

1 package Doritos (large) crushed

1 cup cheddar cheese, shredded


Mix together soups and Rotel tomatoes. Chop or tear chicken into bite size pieces. Add to soup mixture. Grease 13x9 inch baking dish. Put a layer of chips on bottom of dish (1/2) bag. Pour chicken-soup mixture on top of chips. Place remaining Doritos on top of chicken-soup mixture. Heat in 350 oven for 20 minutes. Remove from oven and top with cheese. Return to oven until cheese is melted and casserole is bubbly.

Rotel is a brand - It is a mixture of tomato and green chili, found near Velveeta or by canned tomatoes.
