Goat Cheese Nacho Dip: Use mild cream cheese instead if you don't like it.
4 oz. goat cheese 1/2 cup sour cream 1 jalapeno pepper,seeded,chopped 1 Tbs. lime juice 3/4 tsp.ground cumin 2 cups thinly sliced iceberg lettuce 2 cups salsa 1 can (2.25 oz) sliced black olives drained 2 cups guacamole 1 cup shredded Chaddar cheese,4 oz. 1 Tbs.chopped fresh cilantro,optional Tortilla chips, optional
In a food processor,blend together 5 ingredients until smooth. Spread lettuce over platter,spoon salsa,olives,guacamole,Cheddar and goat cheese mxture into rows over lettuce. Garnish with cilantro and if desired,serve with chips
1/2 cup frozen nonalcoholic margarita mix - thawed
3 tbsp lime juice - freshly squeezed
1 clove garlic - crushed (or more)
3 pounds broiler or fryer chicken - cut up (3 to 3 1/2) OR 1 1/2 pounds skinless boneless chicken breast halves
Coarse salt
Mix margarita mix, lime juice and garlic in a large resealable freezer plastic bag. Add chicken to bag. Seal and turn a few times to coat chicken. Refrigerate, turning bag occasionally. Marinate at least 1 hr, but no longer than 24 hrs. Remove chicken from bag & reserve marinade.
On your grill place chicken, skin side up on grill, Brush with marinade and sprinkle with some salt. Cover grill with lid & grill 5 to 6" from medium heat for 15 minutes. Turn chicken, brush with remaining marinade and sprinkle with more salt. Cover & grill 20 to 40 minutes longer until chicken tests done.

Olive Dip
1 7 oz jar pimento stuffed manzanilla olives
1 can black olives
3 stalks celery
2 large cloves of garlic
Put it in a food processor and mince finely
add 2 8oz packages of softened cream cheese and mix it together well.
Serve with crackers or sliced sourdough baguettes.

Sparkling Fruit Punch (this is my all time fav bar-b-que drink!!!)
Ingredients:
-One 2 liter of Ginger Ale, regular or diet
-Two cans of frozen lemonade concentrate
- 1/4 cup of Splenda sweetener
-Two or three cups of frozen strawberries, or berry mix
Mix both the cans of lemonade concentrate with 3 cans of water. Pour in the berries, and splenda, then mix well. Add 2 liters of ginger ale and let chill 3-4 hours before serving for best taste.

Here is recipe for Salmon that I found in More Magazine. I haven't made it yet, but I'm thinking about doing it for a friend who is visiting this weekend.
1. Grind the coriander seed and mix with sea salt and merquen
2. Dip one flat side of each salmon piece in the coriander mixture to coat well. Heat olive oil over medium-high heat. Cook salmon, coriander side down, about 3 minutes, or until crisp. Turn fish and continue cooking until crisp on both sides, another 3-5 minutes.
3. Drizzle with basil infused olive oil.
That sounds yummy. What are the measurements for the honey & soy sauce?
I don't measure it,I just put equal parts,and pour it on. Of course,you don't want to put too much soy or too much honey,as long as it doesn't look liquid.

Too hot to BBQ! but looooooove the ice cream and try shakes for the kids Strawberry Cheesecake in blender,process 1 cup strawberry ice cream with 1/2 cup milk. I cup trimmed fresh strawberries,1/4 cup strawberry cream cheese spread and 2 drops liquid red food coloring until smooth. If desired, grnish with whipped topping strawberry sauce and strawberry .
I think anything like water or iced tea is great for this weather!
