Sounds like "sauerkraut candy". I saw a similar recipe for brussel sprouts the other day, also with a cup of sugar. Doesn't putting a cup of sugar on vegetables defeat the purpose of healthy eating?
A lot of folks who don't generally like sauerkraut still seem to like this recipe.
1 cup sugar
One half cup cider vinegar
One half cup chopped celery
One half cup chopped onions
One half cup chopped green peppers
One half cup shredded carrots
One can (27oz.) sauerkraut, drained but not rinsed
Simmer sugar and vinegar until sugar is melted-let cool.
Pour over sauerkraut and other ingredients and keep in fridge over night.
That's it.
I'm not sure about using cider vinegar instead of white and carrots just don't seem appropriate. The sugar must go. I want my sauerkraut sour. I'd give the rest a try. It's even healthful prepared that way, not that a trencherman of my renown would care.
Sauerkraut will join roast turkey basted with duck fat, stuffing and gravy full of giblets, mashed potatoes, candied sweet potatoes, and cranberries on my plate (actually a little bowl on the side) for my Christmas repast. It provides a wonderful counterpoint and a cleansing to enjoy the feast even more.
Have some with your huge meal; you'll enjoy the rest even more.
But no, no, no to sugar in it. That's as bad as mixing sugar with Iranian caviar.
And remember, a feast isn't a feast unless you wonder if you're going to die of overindulgence afterwards.
Doesn't putting a cup of sugar on vegetables defeat the purpose of healthy eating?
Probably, but so does putting cheese on broccoli. Besides, dentists have to make a living, too. Actually, this recipe isn't very sweet-it just kind of neutralizes the sourness of the sauerkraut.
