Just made this today in the crock pot:

15 oz can of light red kidney beans-rinsed/drained
15 oz can garbanzo beans-rinsed/drained
15 oz can cannellini beans-rinsed drained
1/2 chopped sweet onion
2 tbsp chili powder
2 tsp cumin
1 tsp salt
4 cups low sodium beef broth
1 cup water
1/4 cup barley
1/2 cup beer
1 garlic clove minced

put all ingredients into the pot except water and barley. Cook on high for 3 hours. Then add barley and water and cook another 40 minutes on high.

I tasted it and I am not sure I like the beer in it. It does have great flavor though. You could also do this and make it a 5 bean soup too. I will see if DH likes it. Next time I make it I may leave out the beer.

Seems like a lot of cooking time for canned (already cooked) beans...barley takes a little while. I like my beer but rarely find a use for it or other alcohol in food. We get the bagged 5 bean soup mix I think it is. It's good with link sausage cut up in it. I'm with you the beer sounds like an odd addition. Though I love to add lemon or lime juice to some soups.

I could have cooked this on the stove top for less time but I was doing some other cooking as well. I hope DH likes the beer in it, if not i may omitt it next time.

Use a lighter beer. You would think that Guinness stout would really give the beans a good flavor. Hint: it does not.

I always add a can of light beer to my chili - My family loves my chili - except for adult son - tells me he must be allergic to hops or something - so if I make it when he is around I skip the beer.

well as it turns out the soup had a great flavor and i really enjoyed it. My MIL stopped over and we had it for lunch. The beer was not as dark and thick as Guiness but it was good over all. It was brand I never heard of Rock River Lager. My DH got a case of different bottled beers for Christmas and I chose this one. It was a medium amber color.I'd make this again but use a lighter beer like maybe a bud light or Something.
