3 boneless skinless chicken breasts cut into bite sized peices
1 medium onion chopped
1 clove garlic chopped
1/2 tsp nutmeg
1/4 tsp salt
1/4 cup red wine
1 lb sliced baby bella or button mushrooms
2 cups cooked orzo
2 tbsp olive oil
1/2 cup lowfat milk
1/2 light cream
4 tsp corn starch
1 tsp italian seasoning
1/3 grated parmesean or romano cheese

Heat 2 tbsp oil in a large non stick skillet. cook onion and garlic for about 4 minutes, add mushrooms and Italian seasoning and cook until mushrooms are browned, add chicken and cook until chicken is opauque but not over cooked, add wine and cook 2 minutes more. Combine the milk, cream, salt, nutmeg and cornstarch in a 2 cup glass measuring cup add to skillet and cook stirring constantly until slightly thickend, stir in orzo and grated cheese. Serve immediately.

Easy to make, this time I actually used ditalini pasta but it works well with any tiny pasta just don't use it with pastina.
