This is the salad recipe I found, which I'm going to make just as soon as it warms up (I'm freezing! Maybe I'll make split pea soup tonight!). The recipe doesn't say how much or how many servings it makes.

Yellow Split Pea Salad

1 C yellow split-peas
2 large tomatoes
2 avocados
3 green onions or one medium white onion
1/2 C minced parsley leaves
1/4 C tahini
1/4 C plain yogurt
3 garlic cloves
1/4 C lemon juice
1/2 C olive oil
A pinch of cumin, salt to taste, a pinch of paprika

Bring about 2 C of water to a boil in a medium saucepan. Add the peas and reduce heat to medium. Cook for about 25 minutes, until soft. Drain.

Dice the tomatoes and avocadoes and chop the green onions and parsley. Mash garlic cloves in a mortar with a little salt.

In a small bowl, place the mashed garlic, tahini, yogurt, lemon juice and stir until smooth; add the olive oil and stir to combine well. Add the cumin and paprika and a dash of salt if needed and pour the dressing over the peas and veggies. Mix well.

1 cup is half a small bag of peas, right? It will make a lot... those suckers really swell up.

i got a couple of bags of split peas very cheap. i will just boil them up and put nothing on them and eat them as is. i hope they are better than the lentils that i did that to. those were nasty.

They will be very bland without any seasoning at all. They would taste better if you boiled them in broth instead of just plain water or stir in a little sauteed onion and fresh garlic...

At least put a little bit of chopped up bacon in with them.. they will soak up the flavor and 2-3 slices of bacon is enough to season a whole pound, so it doesn't add a lot of calories.

I love split pea soup with diced carrots, celery, onion, garlic. If I had a bunch of split peas, I would probably make a bunch of soup to freeze and share.

hmm broth may be doable. im ok with bland, during the week i keep a strict diet and i liked the nutritional profile and price of the split peas. i was very happy with kidney beans on their own when i got them in the past. haha of course bacon would be nice but that doesnt work into the monday - friday diet.
