So, its that time of year here in Central Florida, my garden is coming in with a vengeance.
I have everything in hand, except for the slicing cucumbers.
Anyone have ideas beyond the usual cucumber salad, on top of green salad, raita sauce and tzatziki sauce?
Help, they're about to take over the kitchen!

My mom's cucumber salad:
3 cucumbers peeled and sliced very thin
1/2 cup sour cream
1 tbsp onion powder
1 tsp salt
1 tsp black pepper
Mix all ingredients togther in a bowl, You may need more sour cream. Cucumbers hold alot of water so it might be a little watery. You could substitute the onion powder for fresh sliced sweet onions if you like.

Cucumber sandwiches! Nice sturdy, whole wheat bread, mayo and/or butter, onion and/or cheese, and lots and lots of cucumbers, sliced thin. Yum.

I have only gotten 3, so far and I made the classic three bean salad dressing with cucumbers.
If I get too many, I guess I'll try making pickles.

I make this version of that salad;
Creamy Cucumber Salad with Dill Recipe - Gurkensalat mit Sahne und Dill
Its the same recipe that my grandmother made, love the dill in this dish......dill is something else I have too much of in the garden right now.

Tomato-Cucumber Guacamole

1 pint cherry or grape tomatoes -- halved (or 2 medium tomatoes, coarsely chopped)
2 medium cucumbers or 1 large cucumber -- peeled and coarsely chopped
2 avocados -- coarsely chopped
1/4 cup red onion -- chopped
1 1/2 tablespoons lime juice
1 teaspoon grated lime rind
1/2 teaspoon ground cumin
Salt -- to taste
Black pepper -- to taste

Toss everything around in a bowl. Add salt and pepper to taste. Serve immediately, don't prepare the day before.

Can be a side dish, a topping for salad greens or a condiment for chicken, pork or burgers.

you can also use them to make refreshing cucumber spa water. i also put it in a mister to mist my face when i am lying in the sun
