I call these "cheater" stuffed shrimp because I use frozen lump crab cakes from Sam's. So easy!
Shrimp - About 16 medium size, cleaned leaving tails on, slit down the back so that they lay flat
2 Lump crab cakes, thawed - I used the ones from Sam's (Member's Mark, I think)
Butter
Lemon Juice
Melt some butter in the bottom of a baking dish. Mound the crab cake mixture on top of the shrimp, pressing lightly. Drizzle with a mixture of lemon and melted butter. Bake according to the directions on the crab cake box (not quite as long, you'll just have to keep an eye on them). Broil briefly if you want a little brown on top.
