I'm posting this for Dawn, but I want note that I often substitute lean ground turkey, add different veggies in addition to the cabbage, sometimes use leftover rice instead of instant, and tonight substituted tomato paste and beef broth for the tomato sauce I didn't have. I added a diced green pepper and some leftover mixed vegetables to tonight's version.


Stuffed Cabbage Casserole

1 lb. 93% lean ground beef
1/2 cup instant brown rice
1 can tomato sauce, 8oz.
1 can diced tomatoes, 15oz.
1/4 cup water
4 cups shredded cabbage or 1 bag cole slaw mix (in the bag already shredded)
1 large onion, chopped
1 clove garlic, minced
salt and pepper to taste
1/2 cup shredded cheese of your choice (I use sharp cheddar)

Preheat the oven to 400 degrees.

Brown the ground beef and onion, drain. Add tomatoes, garlic, tomato sauce, water, and rice, mix well and stir in cabbage. Pour into a large casserole dish sprayed with cooking spray, cover and bake for 30 minutes. Uncover, top with cheese and bake an additional 15 minutes.

Jeremy doesn't eat beef, so I'd be using turkey as well. I'm definitely going to be making this -- it sounds yummy!

Also, season it well. Tonight I used lots of garlicky grill seasoning (McCormick Montreal Steak seasoning is a great basic peppery/garlicky seasoning) and some thyme. Other times I use Italian seasoning with lots of oregano and basil.

This Montreal chick knows Montreal steak seasoning very well.

I made note of the seasoning issue -- we like our food full o' flavah!
