I had a huge container of ricotta. I had asked DH to add one to our grocery order for lasagna this week, and he decided to order the largest one possible.

I'd love new ideas to use it up-- not just pizza/pasta! I already have Strawberry-Banana-Ricotta smoothies on my list for breakfast tomorrow. Looking for more way to use it!

What's your favorite recipe using ricotta?

Cannolis, just buy the shells and make the filling very easy. Make an Italian cheese cake, I love ricotta cheese on toast with a pinch of cinnamon on top. Eggplant rollatini, stuffed chicken breasts with spinach and ricotta.

Just reread my OP... man, I need to start proof-reading. I apologize for the grammatical errors.

Thanks for the tips! I will definitely use some of them. The ricotta cheesecake idea is tempting!

I found another recipe that looks great:

Reduce some balsamic vinegar into a thick sauce. Take some slices of baguette and lay slices of either fig (fresh or dried) or apple on top. Dollop ricotta and bake until hot. Drizzle with the reduced balsamic.

I like to make a quick dessert with it.

Take a serving of ricotta, add some sweetener like sugar to it, I use Equal, add some unsweetened cocoa powder and a little vanilla or almond extract. Mix it all together. Add some whipped cream if you have it. It's my go to treat when I have leftover ricotta.
