I had tea, years ago with a friend who has since passed away. She made these amazing lemon bars that had powdered sugar sprinkled on top. I asked another friend of mine about her version and she said she just buys the ready made mix in a box. I'm hoping for a scratch recipe. Anybody have one that can snag?

This is a good recipe for Lemon Bars by Ina Garten (The Barefoot Contessa):

LEMON BARS

Ingredients

For the crust:
1/2 pound unsalted butter, at room temperature
1/2 cup granulated sugar
2 cups flour
1/8 teaspoon kosher salt


For the filling:
6 extra-large eggs at room temperature
3 cups granulated sugar
2 tablespoons grated lemon zest (4 to 6 lemons)
1 cup freshly squeezed lemon juice
1 cup flour
Confectioners' sugar, for dusting

Directions


Preheat the oven to 350 degrees F.



For the crust, cream the butter and sugar until light in the bowl of an electric mixer fitted with the paddle attachment. Combine the flour and salt and, with the mixer on low, add to the butter until just mixed. Dump the dough onto a well-floured board and gather into a ball. Flatten the dough with floured hands and press it into a 9 by 13 by 2-inch baking sheet, building up a 1/2-inch edge on all sides. Chill.



Bake the crust for 15 to 20 minutes, until very lightly browned. Let cool on a wire rack. Leave the oven on.

For the filling, whisk together the eggs, sugar, lemon zest, lemon juice, and flour. Pour over the crust and bake for 30 to 35 minutes, until the filling is set. Let cool to room temperature.

Cut into triangles and dust with confectioners' sugar.

Default One of the first recipes I ever made

I first started making these in fourth grade, when I purchased the Peanuts Cookbook from my Scholastic Book list. They are the best lemon bars ever!

I have tried many lemon bar recipes over the years, most were more complicated and had many more ingredients, but these are still the best.

Lucy's Lemon Squares

1 cup flour
1/4 cup powdered sugar
1/2 cup butter (cold)
2 eggs
1 cup granulated sugar
1/2 tsp. baking powder
3 tbsp. fresh lemon juice
dash of salt
(grated zest of one lemon)

Preheat the oven to 350 degrees.

Place the flour, powdered sugar into a bowl or the bowl of your food processor and mix. Cut the butter into cubes and add. Either work in with your hands or pulse in the food processor until the mixture is thoroughly combined and comes together. Pour into a greased 8 x 8 inch bake pan and press the dough into the bottom of the pan. Bake in the preheated oven for 20 minutes.

While the crust is baking, make the lemon custard layer. Place the eggs, sugar, baking powder, lemon juice and a dash of salt. Add the lemon zest, if desired. Whisk until combined and frothy.

When the crust is done, remove from the oven. Give the custard another stir and pour it over the crust. Place back in the oven and bake another 20-25 minutes. The center should only jiggle slightly when they are done. Remove and place the pan on a cooling rack. Cool completely before cutting into squares. Sprinkle with additional powdered sugar.
