Noodle Kugel (This is a side dish)

There are different types of kugel. This is a cheese kugel.

12 oz pkg of wide egg noodles
2 large eggs
1/4 c. white sugar
2 Tbsp. brown sugar
3 Tbsp. butter, melted
1 c. lowfat cottage cheese*
8 oz. sour cream
salt & pepper to taste
Optional: 1 c. raisins

Preheat oven to 350 deg. Spray a 1 quart baking dish with non-stick spray.

Cook noodles per package directions. Drain.

In a large mixing bowl, mix together eggs and white sugar. Stir in melted butter, cottage cheese, sour cream, raisins, salt & pepper. Stir in noodles.

Pour into baking dish. Sprinkle the brown sugar on top.

Bake until the top has browned, approx, 40 minutes. Serve warm.


*cottage cheese - When I've been out of cottage cheese, I've substituted shredded mozzarella. It has a completely different taste and somewhat of a different texture, but it's still yummy. Don't add raisins if you substitute the cheese. Everything else remains the same.

For a more traditional kugel, try farmer's cheese - and if you can't find it anywhere, substitute ricotta.

24-ounce wide egg noodles
2 tablespoons butter
2 pounds farmer's cheese (pot cheese is the original but I don't think more than a handful of specialty kosher stores offer it nationwide. Pot cheese is easy to make but that's a whole nuther recipe)
4 beaten eggs
2 tbsp vanilla extract
1/2 cup sugar

Cook noodles til done, drain and rinse in cold water.

In a large bowl, mix all the ingredients (including the noodles)

Pour the mess into a greased 9x13" baking dish

Bake at 350F for around 50 minutes or til top is brown.

You can add raisins, and you can sprinkle the top with cinnamon/sugar for a crunchy sweet crust.

Alternatively, dump some of the mixture in the pan, then sprinkle a tablespoon cinnamon/sugar over the first layer. Then add another layer of mixture, and another tablespoon cinnamon/sugar. If you add raisins, add them along with the cinnamon/sugar in the layering.

Apple & Noodle Kugel

(This is a dessert kugel.)

4 c. cooked extra wide egg noodles
1/2 stick butter, melted
3 large eggs, beaten
2 Tbsp. lemon juice
6 Granny Smith apples
4 Tbsp. brown sugar, divided
1/2 c. raisins
1 Tbsp. ground cinnamon
1/4 c. slivered almonds
2 Tbsp. unflavored dry bread crumbs, divided

Preheat oven to 375.

In a large mixing bowl, mix together the noodles, eggs and 2 Tbsp. sugar. Set aside.

Into another bowl, grate or finely dice the apples. Sprinkle with lemon juice. Add raisins, almonds, cinnamon and the remaining sugar. Mix well and let stand for 10 minutes.

Spray a round baking dish with non-stick cooking spray. Sprinkle with half the bread crumbs. Add 1/3 the noodle mixture. Top with 1/2 the apple mixture. Repeat the layers, finishing with the noodles. Top with remaining bread crumbs and drizzle with melted butter.

Bake until top is golden brown, approx. 50 min. Serve warm.
