Pecan Custard (sugar, bake at, vanilla, butter)

Another recipe for folks who like the pie filling, but not the crust.

2 cups (or more) pecan halves
1 stick unsalted butter
1 cup honey
1 cup sugar
3 large eggs, beaten
1/2 tsp salt
2 Tbsp cider vinegar
1 tsp vanilla

Arrange pecans in a well-greased (butter or spray) pan.

Melt the butter over low heat, add the honey, sugar, eggs, salt, vinegar and vanilla. Mix well. Pour over pecans.

Bake at 350 degrees for 35 to 45 minutes. Should still be “jiggly” when done.

Store at room temperature.
