Several people asked me for this recipe. It's probably something many of you already make, but call something else. I thought I'd post it here anyway. It's quick, easy, inexpensive and a great way to get another meal out of leftovers.

1 box bow-tie pasta
cooked chicken*
two "handfuls" of frozen peas, warmed
1 can Cream of Chicken Soup
3/4 c. milk

Ritz crackers
Grated or shredded cheese

Cook pasta according to package directions and drain. Place in casserole dish. Add cooked chicken, peas, soup and milk. Mix and serve. That's it!

Optional: Top casserole with cheese or crackers. (I like shredded cheddar on this.) Baked until cheese is melted or crackers are slightly browned.

*Chicken - I usually use leftover rotisserie chicken. There never seems to be enough for a second meal, so this stretches it enough for another dinner. Another option is to use some of the boiled chicken from making chicken soup. You can swipe a few of the cooked carrots from the soup too, to give the casserole a little more color.
