This is sort of a digression, but does anyone know how this kind of plantains and the lawn weed that is also the source for the seeds that make Metamucil got the same name?

Psyllium? Isn't that what Metamucil is made from?

Mofongo!

Fry 1/2 inch chunks of peeled green plantains in vegetable oil until golden but not too crisp. Mash up. Combine garlic and olive oil, mash well. Crush fried pork rinds. Combine all ingredients and there you have delicious mofongo. You can eat it as is, roll it into balls and add to soups or serve it with shrimp, meat.
