Red Cabbage and Apples taste good and it's pretty healthy.
Shred the 1/2 head of cabbage and chop a tart apple (I use granny smith for this). Thinly slice a small onion. Cook the onion in small amount of olive oil until clear. Then add about 2 Tablespoons Balsamic vinegar and 1 teaspoon sugar and cook for a couple of minutes and then add the chopped apple and cook for a couple more minutes.
Put the cabbage in and stir gently. Stir in a pinch or two of allspice and salt and pepper. Taste to see if a bit more basalmic vinegar is needed. Stir and cover and cook on low for at least 30 to 40 minutes or until cabbage is tender. Add more salt or pepper or basalmic as desired to taste.
I made this last night, and it was delicious. Somehow I missed the part about adding allspice, but it had plenty of flavor without it. Thanks for a great recipe.
I made this last night for the first time after randomly finding the recipe here. It is DElicious! Even my husbvand liked it, and I shared with my neighbor. Thanks so much for this easy and really wonderful recipe. I cooked it while my chicken was baking and it all ended up at the same time! Thanks.

Last week in my food delivery, I got a red cabbage. I thought I had clicked on green, but maybe not. So what can I cook with this? I am open to it as a side dish or as a main vegetarian dinner.
I usually make braised red cabbage https://www.curiouscuisiniere.com/german-red-cabbage/ like this and serve it with wild game or other poultry as well to a roast.With leftover braised cabbage I make sometimes a casserole dish layered with potatoes,braised cabbage and poultry meat or roast slices.
How about a red cabbage salad sweet or savory with pancakes?

Fry a little bacon and then a little finely diced, sweet onion in the bacon grease. Add a dollop of apple cider vinegar, salt, pepper and brown sugar. Stir until sugar is dissolved. Pour over sauteed, sliced cabbage.
Use the leaves as something to put under an appetizer. Or use it to in a burger instead of lettuce.
