I've got some leftover sliced cucumbers that I would like to do something with. Maybe a cucumber salad of some sort? I'm looking for recipes that don't involve using a sugar substitute or sugar.

Any ideas?

Raita is a common side dish with Indian curry but is very tasty on its own. For a cucumber raita just fold the cucumber slices into plain yoghurt, add chopped fresh mint and refrigerate to blend the flavors. Very cooling and refreshing!

Cold salad. Lots of variety on the net. In season I like mine with some onion, tomato, EVOO, balsmic and maybe a little feta. Get some pita and maybe a little yogurt as well.

Go great in falafals as well.

I love the honey ginger balsamic vinegar mixed w/ a good olive oil. I add fresh ground mixed peppercorns.

If you are in central Tx. ( near Austin) go to Georgetown on the square there is a winery they have a large variety of seasoned Olive oil and balsamic vinegar.

Leftover cucumber slices? How is that possible?

I eat them as snacks....add a little salt or dip them in your favorite salad dressing. Or better yet, give them ALL to me! LOL
