1/2 cup butter
1 1/2 cups sugar
2 cups sifted all purpose flour
1 tsp baking soda
1/2 tsp salt
1 cup whole milk
3 eggs beaten
2 oz (2 squares) unsweetend chocolate
1 tsp vanilla extract
1 tsp lemon extract
The surprise
1 tsp sugar
fresh raspberries or frozen thawed and drained
homemade whipped cream or you can use the kind in the can
raspberries or canied cherries
Cream the butter and the sugar together. Sift flour with baking soda and salt, add to butter and sugar mixture alternately with 1/2 cup of the milk.(add some flour, then some milk, repeat.)Add beaten eggs. Melt chocolate with remaining 1/2 cup of milk over low heat. Let cool. Add to batter and stir in flavorings. Pour into greased 2 1/2 " miffin pans filling cups about 2/3 full. Bake in a preheated oven on 350 for 25 minutes or until toothpick inserted comes out clean. The surprise: Cut tops off cupcakes and reserve. Gently scoop out inside of cake shells (make sure they don't break.)fill with raspberries that are mixed with 1 tsp of sugar.Top with whipped cream, place tops back on carefully. Decorate each with a candies cherry or a fresh raspberry. Makes 24 cupcakes. I have not had these in years and I just might make some soon. You can use blueberries or strawberries too.
Haven't made them yet and my mom forgot about these until I reminded her yesterday. I have a copy of a cook book that was put out by the mom's and PTA of my elementary school it's about 35 years old LOL. Her recipe was in it.
