I bought a few pounds of this that's cut into large chunks - probably 1/4 pound or a little more each. Now what should I do with it?

Easiest would be to season to taste, wrap slices of bacon around each piece and roast or broil.

Serve with scalloped potatoes or braised apples.

Okay, so it's a tender cut? I'd have to go buy bacon but that sounds delicious.

Cut it up in smaller pieces and make Green Chilies Pork Stew. Here's my recipe.....This is a family recipe which I modified a bit to fit our tastes. I copied from my recipe file to here so I wouldn't have to retype it. Sometimes I make it with reduced fat ground pork (bought at Walmart) or pieces of breast of the chicken but I like the pork loin pieces/pork stew meat the best. Perhaps this is an idea for you.


Green Chilies Pork Stew

1 pound Pork stew meat (or lean loin meat) cut in 1 inch pieces
2 Tablespoons olive oil
5 or 6 medium potatoes chopped into stew size pieces
1 medium onion - chopped
2 tablespoons green pepper - chopped
2 cloves garlic - minced
3/4 can Ro Tel tomatoes with chilies
1 teaspoon Italian seasoning ( or oregano)
4 cups chicken broth
salt and pepper (to taste)
2 tablespoons flour mixed with 3/4 cup water for thickener

Heat olive oil in large frying and add pork stew meat and Italian seasoning. Cook until almost done. Add chopped onion, green pepper and minced garlic and cook until onion is soft. Add broth and simmer for 12-15 minutes to cook and tenderize meat. Then add salt, pepper, Ro Tel tomatoes and chopped potatoes and simmer another 20 to 30 minutes or until potatoes are done. Add flour/water thickening mixture to boiling stew to thicken....might not need all of thickening mixture. Serve in a soup bowl with crusty bread or biscuits.[/SIZE]

Make a slow cooked pork in the crock pot or you can use a dutch oven and cook on 300 degrees for 3 hours.Season the meat with salt and pepper and a little flour, and brown for a few minutes, add sliced onions and chopped garlic, small can of tomato sauce, small can of tomato paste, 1 cup red wine, 1 tsp italian seasoning. Slow cook this and serve over rice.

Butterfly, pound it thin, dip in seasoned flour then egg then bread crumbs......then pan fry makes good sammies

boneless pork chops

it's lean so don't overcook and add fat, like bacon, if ya can.

I don't think there is any cut of pork that is not tender meat.

It will probably be dry. There isn't much fat in that piece of pork. I crock pot it with moisture and make Mexican food with it. But you can cut it into slivers and make stir fry, or even cut it into slices and use it like pork chops.

Thanks for all the ideas. I've been craving stew, so may do that, but where's the green chile in the Green Chilies Pork Stew?

The green chilies are in the Rotel tomatoes (or buy a can of diced tomatoes with green chilies)....but if you want you can add more green chilies....I don't as we don't like it super hot!

Of course, how'd I miss that? Haven't used Rotel in decades. I liek the flavor of green chiles so I buy the mild in cans cuz I don't like it really hot either.
