I"m thinking about quickly browning up a couple chicken thighs and then put a cover on the fry pan and into a 350* oven for 20 mins.

Does this sound ok ?

Sounds great! What time is supper?

You might think about tossing in a chopped-up onion alongside of the chicken pieces. Do you plan to season them with anything? I might dust them with black pepper and powdered rosemary before browning. Possibly some garlic powder, though I'd more likely include fresh garlic with the chopped onion.

If the chicken had thunder-thighs, you might want to add an extra five minutes or so in the oven. Poke a knife in next to the bone when you take them out and be sure the juices run clear (not pink).

Yep, that sounds like a good idea.

After 10 mins in the oven @ 350*, I bumped it up to 400* and turned chicken over.
