Seafood Stuffed Artichokes

1 large artichoke
2 cups Italian breadcrumbs
2 cups parmesan cheese, divided
1 cup olive oil
8oz crawfish tails
4 tablespoons minced garlic
8 anchovies
juice from one lemon

Trim top and leaf tips from artichoke
Boil artichoke about 10 minutes, remove and let cool
Dice crawfish tails and 7 anchovies
In a large bowl, mix breadcrumbs, 1 ½ cup cheese ¾ cup olive oil, lemon juice, garlic, and crawfish tails, check for salt and adjust if needed
Open artichoke up and stuff leaves until full
Place artichoke in tinfoil to hold together
Sprinkle artichoke with remaining cheese, olive oil, and then top with one anchovy
Heat a large steamer pot and place artichoke in basket, making sure that artichoke doesn’t touch the water
Steam for 1 ½ to 2 hours or until leaves remove easily

Looks yummy, but that sounds like a LOT of olive oil for one artichoke. Love the anchovies in there.
