Ingredients:

2 dozen medium sized pods of okra
6-8 large garden fresh tomatoes (a combination of Rotel hot and regular diced canned can be used in the winter)
1 medium pungent cooking onion diced.
1/4 to 1/2 cup nacho sliced jalapeno peppers
1 ear of corn cut off the cob whole kernel style

Cook okra and tomatoes together until okra is tender.
Add corn and jalapenos and simmer until corn is done.
Add chopped onion and simmer until it starts to clarify

Serve hot with a tissue. Tears to follow.

Does the Okra get really slimy in this recipe? I try not to use Okra in stewed typed recipes as I don't much care for the feel of it in my mouth if it's stewed/boiled. I love battered and friend okra though.

No. The tomato acid nullifies the basic properties that make the slime in b. oiled okra. The new texture is very similar to pickled okra that is crisp. It is still different than fried. Adds a new dimension to okra choices. I eat it anyway it can be cooked. Another favorite is to steam it on top of fresh black-eyed peas. Then it is slick and goes down faster than a raw oyster.

While on the subject of okra here is a link to a recipe for pickled okra. It is very expensive in the stores.

Crispy Okra Salad Recipe:
ingredients

1/2 small red onion, thinly sliced (about 1/2 cup)
1 medium or 2 small tomatoes, quartered, seeded, and roughly diced
1/4 cup fresh cilantro, coarsely chopped
About 8 cups canola oil for frying
1 pound fresh okra, trimmed and cut lengthwise into thin strips
4 1/2 teaspoons fresh lemon juice (about 1/2 lemon)
1/2 teaspoon salt
1 1/2 teaspoons chaat masala*

preparation

In small mixing bowl, stir together onion, tomato, and cilantro. Refrigerate until ready to use.
In wide, 4-inch-deep heavy pot over moderate heat, heat 1 1/2 to 2 inches oil until deep-fat thermometer registers 350°F. Fry okra in batches (returning oil to 350°F between batches) until golden brown, about 5 to 7 minutes. Transfer fried okra to paper towels to drain.
In large mixing bowl, combine okra, onion-tomato mixture, lemon juice, salt, and chaat masala. Toss gently and serve immediately.

Thanks for sharing. This one is one we must try while fresh okra is readily available.
