I would substitute fresh lemon juice insted of vinegar for the acid and sprinkle on some good chili power for a little zing. thinly diced serrano for the more hearty.
would be great over both seafood and grilled chicken.
I am giving it a try tonight but am adding Kale and yes, using lemon juice. I am not nearly as big vinegar used as lemon or limes.
Another little twist that I'll have to try - using it as a topping for a salad. I bet that was good. I have yet to try kale raw, but I'm going to pretty soon.

This has been a summer side dish in our house for quite a while. But with some minced jalapenos and lime juice instead of vinegar. In addition to salmon & chicken thighs, we'll serve it alongside grilled pork tenderloin.
It was so good I am taking it to a Bridge luncheon on the 18th. I would add a jalapeno but a couple of the wussies in our group think bell peppers are hot...

I've never had jicama, but from what I understand, it really doesn't have a distinctive taste but does add a crunch factor. I'll have to look for jicama next time I go shopping, not sure how easy it will be for me to find it around here. The last time that I asked for something a tiny bit out of the ordinary...polenta...they looked at me like I was an alien .
