Hubby smoked a nice pork butt and we have a ton leftover. It is just the 2 of us and I was wanting some tasty ideas on what to do with the leftovers. We were thinking pork tacos?

1. Chop/shred the pork and mix it with a good BBQ sauce; serve on buns with coleslaw on the side

2. Chop (fairly finely) the pork and mix it with some lightly sautéed onion, fold this into a cheese sauce for a delicious filling for crepes. Save some of sauce for topping the rolled crepes.

3. Chop the pork and fold it trough a peanut (or satay) sauce and serve over Asian noodles along side a big heap of stir fried vegetables.

4. Add it to your red beans and rice towards the end of the cooking, just about when you start mashing some of the beans for the "creaminess".

5. Lightly chopped, that pork would make a yummy frittata along with the other ingredients.

Can you tell that I really like leftover pork and yours has the added advantage of being smoked...Enjoy.

I freeze mine in single-meal portion sizes.

We use it as carnitas for tacos, quesadillas and enchiladas and, of course, pulled-pork sandwiches. It's great in loaded baked potatoes and you can also make an excellent Brunswick Stew. You can make a plate of outstanding nachos using your smoked pork and toss some pork in a batch of pinto beans for a yummy bowl of beans.

Tacos and Brunswick stew is what I was thinking also! Perfect, thanks guys!!!
