so many good dishes start off with rendering the fat from a bacon, like pancetta, and then cooking the rest of the ingredients in the fat!

That sounds delish. I love golden brown mushrooms in butter or oven roasted till "crispy" and will try the bacon!

I like to cook the bacon, pour off the fat, leaving the pan coated in bacon fat and then add lots of sliced onions and the mushrooms to cook until the onions are caramelized.

I use this as a topping on many different meats. Burgers, grilled chicken, omelets,even steak...man ya'll are making me hungry! And it's EVEN better with a slice of sharp cheddar. Yum.

Oh my, this sounds heavenly. A thin omelette topped with these bacon pieces and mushrooms is manta from heaven. This might be a heart attack on a plate, but one time a year might be AOK!

I heard about this cooking in bacon fat for so many years that I decided to try it one day just over a month ago.
I cooked the bacon and then, using just enough of the bacon grease, I cooked up two jumbo eggs, fried.
I found it totally disgusting and I was really surprised since everybody talks about how good it is.
Never, ever again for me!

LOL - I tried the same thing with scrambled eggs - those were the worst eggs I have ever eaten. The eggs absorbed all of the bacon fat and were too difficult to digest.
