I saw a similar recipe, so I of course had to change it around, and it's GREAT!!
I took two thawed chicken breasts, and cut a lengthwise pocket in each. I spread a wedge of Laughing Cow Swiss in the pocket. Then I wrapped a slice of bacon around each. Put them in the toaster oven at 375.
Then...the sauce... sauteed some diced onions, when they were soft I added 1/4 c. white wine and 1/4 c. chicken broth, brought it to boiling. Then, I added 1/4 c. 2% milk with 1/2 T. flour whisked into it. While it was cooking and thickening I added salt and fresh ground pepper, and stripped some fresh thyme leaves into it.
I checked the breasts at about 45 minutes. They were done, but the bacon wasn't as crispy as I like, so I turned the broiler feature on for a few minutes. FABULOUS! Especially the sauce.
Next time...I'm thinking at least regular sliced bacon (mine were thick sliced) or...prosicutto! Can't beat that sauce though, I'm thinking of what else to use it on.
